Cakes, Fillings, and Icing Flavors

Joyce Gourmet will cater to your cake desires!  The list of flavors for both cake and filling is growing and hence not (and may never be) complete.  If you have a flavor that is not on the list below, please inquire.  I have been asked to bake grandma’s recipe (Grandma always baked her birthday cake).

All of my cakes, icings and fillings are made from scratch, no more than 48 hours before your scheduled event date.  I take pride in my work and only offer baked goods with the finest ingredients: real butter, fresh brown eggs, velvety chocolate, rich cream, fresh fruits.


For ideal texture and fullest flavor, butter-based cakes must be served at room temperature.  Please refer to General Serving Guidelines below.


Unless otherwise noted, my cakes are 4 layers of cake and 3 layers of filling.

Standard Cakes*
Chocolate Butter Cake - full flavored rich chocolate butter cake
Gold Vanilla Butter Cake - also known as yellow cake, full flavored vanilla butter cake

White Vanilla Butter Cake - flavorful butter cake made with egg whites
Almond Cake - yellow cake infused with almond extract
Cinnamon Swirl Cake - Cinnamon spiced cake with swirls of cinnamon-y goodness
Red Velvet - red classic cocoa powder infused cake 
Marble Cake - a blend of Gold Vanilla and Chocolate butter cakes
Lemon Cake - a light, tangy cake infused with lemon zest & lemon juice

Cheesecake - rich, dense, smooth, & creamy New York style
Tiramisu - lady fingers soaked in espresso and kahlua, layered with mascarpone cheese, finished with cocoa powder  

Sour cream pound cake - classic pound cake made with sour cream
Carrot Cake with cream cheese frosting
Coconut Cake - shredded coconut folded into gold butter cake
Key Lime Cream Cake - a light, tangy cake infused with keylime zest & keylime juice

Standard Cake Fillings (Buttercream based filling)**:

Vanilla Buttercream- 100% butter whipped with pure vanilla extract, powdered sugar, whipped cream
Chocolate - melted chocolate folded into vanilla buttercream
Mocha - espresso whipped with real butter & powdered sugar, whipped cream
Lemon - lemon extract incorporated into buttercream
Mint - mint extract incorporated into buttercream
Chocolate Mint - mint extract incorporated into chocolate buttercream

Joyce's Buttercream (JBC) - Classic Italian Meringue buttercream made with 100% butter (silky & rich)
     Chocolate buttercream - melted chocolate folded into JBC
     Mocha Buttercream - concentrated espresso folded into JBC
     Raspberry Buttercream - Raspberry puree folded into JBC
     Nutella Buttercream - Chocolate hazelnut spread folded into JBC
     Caramel buttercream - milk caramel folded into JBC
Kids Buttercream (Kids) - Vanilla flavored old-fashioned buttercream
House Buttercream (HBC) - made with butter, shortening, and no eggs
Colored Buttercream - all of the colored buttercream cakes are crumb coated with vanilla JBC and can be finished with HBC colored to your specifications and desires

Mango Mousse - mango puree folded into fresh whipped cream

Raspberry Mousse - Raspberry fruit puree folded into fresh whipped cream (slightly tangy & sweet)
Strawberry Mousse - Strawberry fruit puree folded into fresh whipped cream (slightly tangy & sweet)
Pineapple Bavarian - crushed pineapple folded into French custard
Fresh Fruits & Whipped Cream - Fresh strawberries, raspberries, or bananas topped with fresh whipped cream

Accent Fillings
Chocolate Ganache - a thin spread of real melted chocolate with whipped cream
Raspberry Jam - a thin spread of jam to accent the flavors

Premium icings
Fondant - rolled fondant colored to your specifications and placed over buttercream crumb coat 

Glazes
Dark Chocolate Ganache Glaze - smooth icing made with melted dark chocolate and heavy cream
Milk chocolate Ganache Glaze - smooth icing made with melted milk chocolate and heavy cream 
White chocolate Ganache Glaze - smooth icing made with melted white chocolate and heavy cream

Other Icings

Cream Cheese Frosting - classic cream cheese frosting icing (normally paired with carrot cake or red velvet)
Whipped Cream - 100% pure heavy cream whipped with pure vanilla extract and powdered sugar
Chocolate Whipped Cream - chocolate mousse folded into fresh whipped cream



General Serving Guidelines
- Serve cake at room temperature (w/ the exception of strawberry shortcakes made w/ sponge cake)
- The time it takes for a cake to reach room temperature varies depending on a number of factors including cake size, weather and temperature. As a general guideline, remove cake from refrigeration:
=> 4 to 5 hours before serving a white butter cake of any size
=> 2 to 3 hours before serving cakes 10” or smaller
=> 4 to 5 hours before serving cakes 12” or larger
- Do not leave cakes under direct sunlight
- Do not leave cakes inside car (direct sunlight and/or heat may cause the cake to collapse)
- Do not travel w/ cakes that already reached room temperature (cake may collapse)
Warning: if you serve a butter-based cake cold you may perceive it as hard, dry or stale
