Chocolate Cake Pops for Client Meeting

Received a request to make 2 dozen cake pops for a client meeting.  They were arriving from NorCal to meet with their important client just a few blocks away from me and due to timing, wanted me to deliver it to the office.  Caught her just minutes from taking it up to the office so she can bring them in herself. Chocolate Cake Pops covered in chocolate, tiny sprinkle gems.  Then individually packaged and tied with a tiny white ribbon.

We going up to LA for the first time since we had arrived in SD.  My brother was throwing a surprise birthday for his gf.  And it was the first time to meet her. So I thought I could make something for her. Chocolate cake pops shaped like the moon with tiny stars! Happy Birthday Jessica! And while we were up there visiting family, I also made some for my sister's birthday which we had missed a week earlier. Happy Birthday Maki!

Holiday baking!

With holidays come baking...and lots of it!  Christmas seems to by synonymous with cookies, at least in my circle of friends back at home.  Every year, the baking side of everyone seems to come out to create delicious baked goods to share and exchange. I decided to bake two types of biscottis, those Italian twice baked cookies.  One was a chocolate biscotti made with mini semi-sweet chocolate chips and white chocolate chips, deliciously dipped in white chocolate. The other was a chocolate biscotti with mint chocolate chips and milk chocolate chips.  This year, I was visiting family in LA from Thanksgiving through New Years, with a wedding in Tahiti for 5 days at the front end.  I have been staying at my mom's place for 2.5 weeks, which is nice because she has so many of the baking tools that I usually require to bake.  I ran over to Joann's to purchase the little goodie baggies and ties, and biscotti ingredients at Ralphs. Mickey Mouse Birthday Cake

After extensive communication about design and cake ingredients to fit within budget, the final decision came down to creating a Mickey Mouse holding balloons.  I received a photo of this Mickey Mouse which was baked using a Wilton cake pan.  The challenge was that the cake pan was created in 1995 and had long been discontinued.  eBay came to the rescue (though there was a premium on the bidding because it is a rarity now)!  And luckily, the cake order was placed enough in advance so the cake pan arrived in time to bake 2 layers (chocolate and marble), crumb coat with vanilla buttercream, and apply a thousand stars of various colors of Swiss Meringue Buttercream. Happy 2nd Birthday Samarth! And thank you, KD, for your kind testimony.
