My first daughter, Claire, turned 3 this year! I can still remember her birth, arriving 17 days early and the best Mother's Day gift ever! When trying to decide what theme to choose for this year's birthday, we were debating over several characters. She was so excited every time she watched Mickey Mouse Clubhouse, we decided it would be perfect for both genders as it included all the characters. She found a cute Minnie Mouse outfit at walmart and so it was decided and the planning began! Claire has been my sweet sunshine and mommy's little helper when it comes to baking. She helped to measure and mix the ingredients to make her chocolate Minnie Mouse Cake and her Mickey & Minnie Mouse Cake Pops! I received a sweet call from a mother in Texas. She wanted me to make a special birthday cake for her son who had served in Afghanistan and is currently stateside. He had celebrated other birthdays away from home, including in Afghanistan where they tried to send cookies, unsuccessfully. Receiving this call, I was almost in tears and felt honored to make his birthday special with an Army Helicopter Cake, along with an adorable video of his niece singing happy birthday.
