Heels Cake - Gluten Free Chocolate & Brown Sugar cake with Chocolate Buttercream



Cancer, the dreaded "C" word. It has become such an epidemic in our society that people are loath to even mention its name. Cancer is a disease that can affect many different parts of the body. Some of these diseases are more serious than others. It is not only the disease that is painful but also the many way of treating it. Radiation treatments may kill the cancer but are also dangerous for the body. Chemotherapy comes with many side affects such as hair loss and severe nausea. The many faces of this disease challenge an individual to show their fighting spirit and will to live.  What a blessing to have support from family and friends.

Not long ago, I received a call from Benita, who had just learned her dear friend had been diagnosed with cancer. She reached out to me from another state and asking if I could deliver a cake to her friend who lived in a neighboring town, just to lift her spirits. When I asked when she needed it by, she quietly said, “Tomorrow.” Less than 24 hours.

Normally, I require at least two days for each order. I purchase ingredients fresh for every cake, often making multiple stops for specific items like cake boards, boxes, tools, or unique decorations. But something about this request made me drop everything. 

The cake was specially requested to be gluten-free, made with chocolate and brown sugar. The theme was soft and feminine—pink, pearls, high heels, anything girly. She specifically wanted a 3D fondant heel as a topper, which would bring a smile when she saw the surprise.

Time was tight, but I couldn’t say no. I rushed around town gathering everything I needed and headed home to begin. I baked a two-tier cake and let it cool while I spent the night making fondant from scratch—coloring, shaping, and crafting every detail by hand. As the sun rose, I was putting the final touches on the cake.

A 2 tier rich chocolate and brown sugar gluten-free cake was crafted, layered with chocolate buttercream frosting. It was decorated with fondant high heels brushed with gold shimmer dust and accented with playful pink and white circles. To complete the presentation, a cute patterned foam board from Michaels was used as the base!

The delivery felt different that morning. As I walked up the steps to the front door, I was nervous—this wasn’t just a cake. It was a message of love, strength, and care. I was simply the one chosen to carry it. And when the door opened and I saw the look of joy and emotion, I was reminded why I do this. It’s not just about the cake. It’s about the connection, the impact, and the honor of playing a small part in someone’s life.

A month later, I received another call. My client gently shared that her friend had passed away. For the next 30 minutes, she spoke of their friendship, her grief, and her gratitude. She thanked me for making it possible to show her love while there was still time.

That call has stayed with me. I am a messenger—and as long as I am able, I will continue to deliver love, one cake at a time.

One of the reasons I continue to bake cakes for my clients is because I truly feel blessed to be a vessel—a messenger—delivering love in the form of a custom cake or dessert for someone’s special moment.
